Beignets with Smoked Salmon
Ingredients:
225 g flour 3 teaspoon baking powder
3 eggs 250 ml sodawater (or tapwater)
1 lemon 3 sprigs basil
sunflower oil (or any oil)
Topping:
150 g smoked salmon 125 ml sour cream
some dill
Mix the flour, baking powder,eggs, and the sodawater. Sprinkle some salt and pepper, mix very well. Cover the bowl with plastic foil and let it rest in the fridge. Chop the basil leaves and rasp the lemon. Add it to the flour- mix.
Pour 3/4 of oil to a deep pan (10 cm), add the beignets one by one into the hot oil using an ice cream scoop or a spoon. The beignets will float within seconds and if it will not float then the oil is not hot enough, fry until golden brown and turn the other side using a tong and fry till both sides are golden brown.
Drain them on a layer of kitchen paper to get rid of the excess oil.
Arrange the pieces of smoked salmon on top of every beignets and scoop some sour cream on top and garnish it with dill.
