Cassava Cake
Cassava cake is a traditional dessert or snack in the Philippines. There are lots of recipe versions and this one is my own discovery. This recipe is close to Goldillock's cassava cake. Well, that's modesty my dear friends :-)
Ingredients:
1/2 kilo grated cassava cake 1 can condensed milk
1 cup evaporated milk 2 cups fresh coconut milk
1 bottle of macapuno 125 gram butter
1/3 cup sugar
Preheat the oven to 160 deg C.
1. Cream butter and sugar until light and fluffy.
2. Add in the grated cassava and macapuno, mix very well.
3. Mix all the liquid ingredients and add to the cassava-macapuno mix.
4. Grease the baking pan and pour in the batter.
5. Bake the batter for 50 minutes to 1 hour or until the top turns brown.
6. No need to garnish anything since the top is already brown, beautiful and creamy.
