Coconut Macaroons - French Style
Ingredients:
4 eggwhites, slightly beaten
450 g caster sugar
1 1/2 teaspoon glucose or golden syrup
1 1/2 teaspoon vanilla extract
180g desiccated coconut
125 g flour
Preparation:
1. Whisk the egg whites, sugar, glucose, into a large heatproof bowl. Set the bowl over a pan of boiling water and beat the mixture until it is warm. Remove the bowl from the heat and add the vanilla extract, desiccated coconut, and flour. Stir the mixture. Cover the bowl with plastic wrap and let it rest in the fridge.
2.Preheat the oven to 150 deg celsius. Line two baking sheets with baking paper.
3.Shape 1 teaspoonful of the mixture with wet hands into balls. Press the balls slightly and place them on the baking sheets with good spacing.
4.Bake the macaroons in 15 minutes golden brown. Rest the macaroons 5 minutes on the baking sheet and let them cool on a rack.
Tips: pack the macaroons lightly, 1 week shelf life.
