Italian Orange Cookies
175g flour
200 g semolina or polenta
100 g caster sugar
100 g butter, soft
2 1/2 teaspoons grated orange zest
2 eggs
Preparation:
1.Grind the flour, semolina, sugar, butter, orange zest and eggs with a pinch of salt in a food processor until smooth. Put the mixture in the refrigerator for 15 minutes.
2.Preheat the oven to 190 deg. celsius. Grease a baking sheet and scoop a teaspoonful of the mixture onto the baking tray.
Moisten your fingers with water and press the mixture flat. Do not use too much water, otherwise it changes the structure of the cookies. Leave enough space between the cookies.
3.Bake for 15 minutes until golden brown.
4.Remove from the oven, place them on a wire rack and let it cool.\
5. Serve and have fun!
