Pumpkin Cupcake
Ingredients:
1 mango 50 ml water
130 ml carrot juice 130 g grated carrots
200 g flour 7 g baking powder
230 g sugar 180 ml sunflower oil
2 eggs 1 vanilla pod
Pre-heat the oven to 180 ºC. Sift the flour and baking powder. Cut in half the vanilla pod and scrape the small seeds inside. Mix the flour,baking powder and sugar in another bowl. Mix in another bowl the oil,carrot juice, eggs and vanilla. Mix both mixtures,the liquid and the flour mixture. Lastly, fold the grated carrots into the batter. Divide the batter evenly to the cupcake pan. Bake the cupcakes in de oven about 25 minutes golden brown or until done. Let it cool.
Decorate the muffins with the mascarpone cream .
