Yiaprakia or Greek Stuffed Cabbage
Greek Food is one of the best food for me. The taste of the food is not complicated, it's just simply divine. As a Filipino, i recognized that the taste of the Greek food is not far as the Filipino kitchen. They enhanced the flavours with the mediterranean herbs that is abundant anywhere in the country. Mediterranean diet is one of the most that i appreciated so much.
Ingredients:
1 large and soft white cabbage 500 g minced meat (beef, pork or chicken)
3 onion medium size, chopped 1 cup rice
3 T parsley,finely chopped 1 T dill, finely chopped
1 glass olive oil 3 glasses of water
1/2 teaspoon cumin 1/2 teaspoon salt
1/2 teaspoon pepper
Preparation:
1. Mix the minced meat with the rice, onion, parsley and dill. Season the mixture with the salt and pepper. Set aside.
2. Blanch the cabbage in boiling water with it's core at the bottom of the pot. Remove the blanched cabbage and cut the core out. Peel the leaves of the cabbage carefully.
3. Arrange the leaves on a tray. Pick a cabbage leaf and stuff each leaf with the filling mixture. Roll the leaf like a lumpia.
4.Line the bottom of the crock pot (if none use a deep pan) with blanche cabbage leaves and place the bundles on top. Sprinkle the bundles with olive oil, salt and pepper, 3 glasses of water. Cover the pot.
5. Cook the bundles over moderate heat for 60- 90 minutes.
